What's a good second profession for a DK?

I've been playing around with a gnome DK on Bronzebeard (here she is, isn't she cute?) and trying to figure out what professions I want. On that server I currently have an herb/alch and a mine/eng, and on various other servers I've maxed out pretty much every profession in the game except for Jewelcrafting (which I'm not sure I want to invest in given how much I hear it's being nerfed in Cata. Plus, like inscription, it just seems like a profession that's fairly low-personal-gain.)I ...
